A lot of shops reach for whatever is fastest. We grew up on copper, and we still think it's the right answer for most supply work in a Chicagoland house: it's quiet, it lasts for generations, and any plumber with a torch can repair it fifty years from now. We use PEX where it genuinely makes sense. We just don't default to it.
